Apple Tarte Fine, Cream

A thin slice of apple tart, fruit fanned in tight overlapping rows, dusted and served with a plain cream.

A tarte fine is judged on its underside. Pale pastry means the whole slice is soft, however good the fruit looks from above.

Overlapping the apple tightly is what stops the slices curling up and drying out at the edges during the bake.
