Beetroot Carpaccio, Whipped Cheese, Herb Oil
Beetroot and yellow tomato laid in a ring around whipped cheese, each disc dressed individually with herb oil.
A ring plate is unforgiving: any disc cut thicker than the rest breaks the circle and the eye goes straight to it. Dressing each piece individually is slow, but pouring oil over the whole ring means it runs to the lowest point and the outer pieces end up dry.
