Burrata, Leaves, Tomato and Crouton
Whole burrata set into dressed leaves with tomato and croutons underneath to catch what runs out.

Two things ruin burrata: serving it cold and serving it on a bare plate. Cold, it has no flavour and will not give.
On a bare plate, the cream runs out and sits there. Croutons underneath solve the second problem and give the dish its best bite.
