Cured Salmon, Quinoa, Orange and Feta

Grain bowls are usually under-seasoned because the grain is dressed cold, when it has stopped absorbing anything. Dressing it warm and cooling it afterwards means the seasoning is in the quinoa rather than sitting on it.

Orange rather than lemon keeps the acid soft against the cured fish.
