Pea Shoot Salad, Herb Oil
A tangle of pea shoots and cut herbs over a pool of bright green oil in a wide shallow bowl.

Delicate shoots collapse the moment they are dressed. Pooling the oil underneath and piling the leaves on top means the guest brings the two together on the fork, and the salad looks the same at the last bite as the first.
It is a small trick and it changes the dish completely.
