Prawns and Mushrooms, Melted Cheese, Herb Oil
Prawns and mushrooms baked under cheese until it melts over everything, finished with a green oil.
Anything finished under a grill has to arrive there already cooked. Prawns will go rubbery in the time it takes cheese to melt, so they are seared and pulled early.
The green oil goes on after it comes out, purely to cut through what is otherwise a very rich plate.
