Radicchio, Pear and Parmesan Salad

Bitter leaves torn rather than cut, with sweet pear and enough hard cheese to hold the dressing.

A bitter leaf salad only works if the other three elements are strong enough to argue with it. Pear brings sweetness and water, the cheese brings salt, the acid ties it together.

Tearing rather than cutting matters more than it sounds: a knife edge seals the leaf and the dressing slides straight off.
