Fine Plating

Tasting Plate: Purées, Confit and Crisp

A spaced tasting plate with dots of two purées, confit fruit, crisped florets and small parcels.

A plate with this much negative space has nowhere to hide. Each dot has to taste finished by itself, because a guest will inevitably eat one on its own.

It is a harder discipline than a composed plate, where a strong sauce can carry a weak component.
