Whipped Cheese Tartlet, Grape, Candied Pecan

A short pastry shell, whipped young cheese, cold grapes, and candied pecan for the crack.

Fluted tartlet filled with piped whipped cheese, green grapes, candied pecans and a mint sprig on an olive wood board

This sits between a cheese course and a dessert, which is a useful place for a menu to have something. The whole dish depends on a contrast with a shelf life of about twenty minutes: crisp shell, cold cheese, cold fruit, candied nut.

Build it early and you serve a soft tart with warm grapes.
