Sealed clay cooking is the oldest technique in the Georgian repertoire and its advantage is theatrical as much as culinary: nothing escapes until the lid is lifted at the table. The bread and dip are there so the first thing a guest does is wait, which is exactly long enough for the pot to stop spitting.
