Ember Corn & Summer Vegetables

A vegetable plate that refuses to behave like a side. Everything on it has been through fire, and the point of the dish is the gap between the char and the acid that lands on top of it.

The corn is cooked past where most kitchens stop, which is where the sugars turn from sweet to savoury.
