Shakshuka
Eggs baked into a spiced tomato and pepper base, finished with herbs and served in the pan.

The sauce has to be reduced further than feels necessary before the eggs go in. Too loose and the eggs sink and poach into it rather than sitting proud.
Pulling it while the whites have only just set is the other half: the cast pan carries enough heat to finish them on the way to the table.
